A De Montfort University (DMU) student has combined his business skills with his love of ice cream to publish his very own recipe book.
Ben Vear, 22, launched his book, Make Your Own Organic Ice Cream, at an event at the university on November 10 2011.
The 192-page paperback contains exciting recipes that use locally-produced or home-grown ingredients to make delicious ice creams, including strawberries and cream, butterscotch chip, lemon meringue and even a seasonal Christmas pudding flavour.
A business and management student, Ben comes from a long line of ice cream makers, with his great-grandfather, Albert Winstone, founding Winstone's Cotswold Ice Cream in 1925.
This is probably the first time I have ever seen the word 'organic' and 'University' in the same sentence. It always grieves me that seats of learning seem to know little of and care even less about nutrition. I hope Ben Vear does really well with his book and I'd like to believe that his pioneering work will help change the diets of some of his colleagues.
