can you recommend maybe some others dishes in which would work well with the langoustines.

If you like Langoustines, try Squat Lobsters which are usually discarded as bycatch in creel fishing. Sweeter than the langoustine, superb. My own recipe for scampi is to die for, Champagne Battered. Use Hugh Fernleys ground nut oil/beer batter but use champagne instead of beer. Use the raw tail meat from the langoustine and fry until golden brown. Serve with wedge of lemon, tartare sauce and chips!

I noticed the water was not boiling (or even simmering) when the langustines went in, is that important?

@happyidiottalk The water should be simmering but on the first take our chef burnt her fingers on the langoustines!
