  • The temperature that is over 500 degrees refers to the top of the drum, not the beans! Coffee beans will catch fire once they reach around 495 degrees. Mind me asking, but why are you roasting so dark? Imagine you have two pieces of bread, one slice from Wonder bread, the other a fine quality artisan bread. Now, you toast them so they both turn black, they will both taste the same, same goes for coffee. Try roasting some more "delicate" coffees to around 435-440degrees @ 14:30 on your Probat
