Well, in the Mazinkaiser manga, they DO salvage Z after beating Ashura and the Ashura Mazinger. At the end of the story when Kaiser's lost at sea, Kouji goes back to Z.

Remember Ashura isn't using a "cheap copy" he's using the actual Mazinger that was captured. Hence why Mazinkaiser was broken out. Of course Ashura didn't actually fix Mazinger completely. Hence it has one eye (and only one beam)
