Peggy, I am just starting out as a cake designer...1 year down now. I am getting ready to build a little garden studio to house my workspace and have a little seating area for my clients to discuss their cakes. I wanted to have some display cakes. Can you tell me...are yours covered with fondant....do you use Royal Icing for the piping, borders? Does it harden and can it stay out in the open without deteriorating. I can't seem to find any answers to these questions on YouTube. Help!

thkn1.. that's is actually NOT royal icing, it's liquid fondant, very common in England where Peggy Porschen lives.

thkn1, the orange stuff that she puts on the cakes first is apricot jam that has been warmed up, the red glaze is Fondant Icing, you can make it from scratch if you look for recipes on the net but you can also buy it in powder form and add water and colour. Its different to rolled fondant though. I borrowed Peggy Porschens Romantic Cakes book from the library and its great, especially for beginners.
