Mix:
.6 kg flour (~4.5-4.75cups) 1.45 lbs
1 tsp salt
2 tsp sugar
2 tsp yeast (1 package)
Add:
375mL warm* water (~1.5 cups) *about 110F or 43C
4 tbsp vegetable oil
Knead dough until smooth
Place in large bowl and let rise for 1 hour
Portion into 5 round pieces
Flatten with a rolling pin and place on brad peel
Let dough rise for another 30 min
Indent middle with fork
Baste with egg yolk mixed with water (~1:1 ratio or less)
Top with sesame, cumin, sunflower seeds, etc.
Pre-heat oven to 500F (260C)
Bake 8-10 min
Place on wire rack immediately after removal from the oven
Allow the bread to cool down for about 5-10 minutes
Eat while still warm or save for later
