It works like a conveyor. I used a more sophistocated model myself. What happens is, the whole machine is filled with Animal or Veritable fat, heated up to a liquid. You see the bowl with the light and the "piston" type contraption on it? That is where the dough goes, then the "piston" mechanism turns, the dough falls into the gap and gets pushed out into a raw doughnut. Then the doughnut is gently guided up the conveyor until it is cooked, and caught in a rotating bowl. Then you coat them.
