thats a huge squash, the one i have is tiny!! i thought it would be enough for just myself but now i'm not so sure!

My favorite soup for the winter months!
It's so much easier to roast the butternut squash whole (a large one) for approximately 1 hr. 15 minutes. Let it cool, scoop out the seeds and throw away, then scoop the flesh. No peeling or chopping this hard squash!

i would like to know a recipe for butter nut squash soup that is more buttery and sweet than spicy and well garlicy :)
