    低温の油でじっくり揚げずに、”焼き”で仕上げてるのは天晴れで­す!。

    たれの香ばしさ、皮の焼き具合!

    今までの名古屋手羽先を越えるのでは・・・

    機会があれば一度でいいから伺ってみたいです。

  • It is teriyaki sauce. He made it with sugar, sake and soy sauce. I think the ratio was about 1:4:2, but you can find many variations, or even premade mixes. He finished with a shio koshou mix (salt/pepper).
