I want to build a 10X10 foot deck. How many pilings will I need?
It depends on what you are using for stringers and for pilings.

How far do you space the decking boards on the dock>

It depends (of course) on the materials you are using and such but, usually, since docks are built above water, you want to leave slightly more space between the boards than you would on a normal deck to allow for expansion when the boards get wet.
A safe bet is to leave about the thickness of a pencil - which also happens to be easy to hold between the boards when setting them into place.
