They're a bit of a pain to make, but daifuku are worth it. So yummy.

You'll need:
1 cup mochiko
1/4 cup sugar
2/3 cup water (minus a few tablespoons if you'd like it less sticky)
desired filling (anko, raspberries, other fruit pieces, peanut butter, chocolate chips, etc.)

Mix mochiko, sugar, and water together. Microwave for two minutes. Microwave again for another two minutes or until the mochi lump begins to inflate. Remove from microwave and stir. Dust work surface and hands with cornstarch. Tear a lump of mochi from the mass and flatten into a disc. Add filling. Pinch close. Roll daifuku into a ball. All done.

  • mochiko is just the japanese name for glutinous rice flower which I'm sure you can find at those stores.

  • MiKaKo22 - mochiko is the Japanese name for glutinous rice flour, which is the same thing as sweet rice flour. It is NOT the same thing as regular rice flour though.

  • @KokoroAiNeko Im going to make it with "Glutinous rice flour" tomorrow, if you look and wikipedia "daifuku" it says glutinous rice flour not mochiko. So just look for "rice flour" then "glutinous". Try asian (indian, chinese, korean, ect) shops, i found my flour in an afgani shop lol.

  • Where can you buy Mochiko in Québec, Canada? Do you think a China Townwould have it? I'm looking for it like nuts D;
