German Pancake with Sweet Apple Filling

My family asks for this at least once a week, and I have also made it for my friends for consumption while we watch the Hockey game, Everyone always comes back for more!

Great as a breakfast meal or as a desert.

How to make the Filling

1/4 cup of Melted butter
3/4 cup Light Brown Sugar
1 1/2 Tbs Cornstarch
1/2 cup of Milk

Mix the above in a pan over medium heat till thickened
add
4 or 5 Apples (Granny Smith and or Honey Crisp) cubed
cook for 5-10 minutes
Set the filling aside


Pre-heat Oven and 2 pans at 450 degrees
(I use a Cast Iron Skillet and a Ceramic Pie plate)

Batter
5 Large eggs (at room temperature)
1 cup of Milk (at room temperature)
1/4 tsp Vanilla Extract
1 tsp Ground Cinnamon
1/4 tsp Ground Nutmeg
1/4 tsp salt

Mix in a bowl till smooth and let rest for a few minutes

Take pans out of oven and coat each pan with 2 tbs of butter
(about 1" square)

Split batter in to the two pans and put in the oven
Cook for 12 minutes
Turn pans if needed for even heat
Cook for 5 minutes longer
Re-heat Apple Filling while cooking last 5 minutes
Pull out of oven and add juice from half a squeezed lemon
Transfer pancakes to plates
Add the filling
Sprinkle with Icing Sugar

  • @oshawaogre My buddies (meat heads) suggested next time I crumble sausage and drizzle some egg over the top. This would come out like a meat lovers pizza! I think I will try that next time.
