@710HS You are correct for a layman who only wants to sharpen a knife and no more. If you have special Japanese layered or clad san-mai knives and want "misting" or "frosting" on the sides or want to show off the hamon on a blade then certain stones (naturals mostly) work better on certain steels for this appearance side of sharpening. But just to cut with and everyday use I agree. I only use my naniwa 2k green brick and shapton 5k followed by a strop loaded with green oxide from HandAmerican.

@paintdataint You must be stupid. You can sharpen 10 knives on waterstones in the time it takes to get 1 sharp knife on an arkansas stone. But if you got all day to lay around in your mom's basement then fine, you may be onto something to kill all your spare time.

Nice collection, but in option is overkill. All you need is max 3 stones
ex. 500 -1200 - 6000/8000 + leather strop.
I'm currently using Bester 1200 + Leather strop( with green compound). I've get really nice results when sharpening various steels, like; M2, 1095, Blue Super, 19c27 or VG-10
