what do you think is the strongest rider?

Pale Rider is way, way harder than the others. Of the other three, I guess Black Rider would be the easiest since it's possible to beat him at a ridiculously low level as long as you don't get hit. The other two have an unavoidable attack so you're forced to be at a level where you can at least survive that. I think White's unavoidable attack does more damage than Red's.

All you keep from your last playthrough is your compendium.

by the way, i have a question : are we fight the stupid fiend black rider and the other fiend rider only in king mode? or maybe we can fight them in normal mode?

You can only fight the riders this early in king mode. If you're in normal mode you won't encounter one until chapter 3.

I just started playing this game and I am using -what I suppose- is your guide from GameFAQS.. Anyways, that King Mode is only available when you beat the game first right? o.o

Yeah it is my guide. And yes, you need to beat the game once to unlock king mode, sadly. Which means you won't be able to fight the riders this early among other things :x
