Could you tell me which buttons did you use at 2:14, 3:32 and 5:09 to serve?????

You just have to get the ball into the box with a O pass, (Long Pass Mode Type 4 is best) and then hold R1 as the ball arrives to chest or head the ball up for an overhead.
It's easy to do in Training, and then doing it in an actual game of PES 6 is just a matter of perseverance.

Double tapping [] when the ball is at the right height above your player's head is the easiest way.
