You'll find that there's no need to convert the text to outlines to have them rotate correctly, regardless of the rotation point being on the text baseline. I tried out your exact tutorial, but without converting the numbers to outlines and they stayed just where I wanted them and rotated perfectly. Also make sure that in the Transform Each dialogue box, the proxy icon indicates that you want your numbers to rotate from the center proxy point. You should always keep your text as editable text.
