Captain Falcon and Zero Suit Samus are the exact same thing in both versions.
There isn't a way to switch between languages (other than to switch the audio files inside the game's data).

How do you set SSBB Japanese?

In Japanese version, Sonic says Japanese but very often speak also English.
For Example, "Come on!" "A piece of cake!" "Hey, guys!"

I always find it interesting to see what kind of voices developers match with characters in various languages. Some of these are pretty cool differences.
I don't know why, but I find it amusing that both voice actors for Ike sound almost exactly the same.
