    Animals have been drinking alcohol long before humans have distilled it. Even today, animals in Africa can be observed eating fruit that are purposefully left to ferment in order to get drunk.

    Octopus changes color and skin texture to blend into the environment as camouflage. It's probably trying to blend into the new external environment after leaving the bottle.
