A "Charlotte" is a very special sponge cake with a strawberry cream filling, named after Charlotte von Mecklenburg-Strelitz, wife of King George III. I made it with love as a thank you for Badbearwatch's mom.
Music: Frederic Chopin - Nocturne Opus 9, No.2

75 grams starch
Tea spoon of baking powder

½ a litre of buttermilk (or 500grams yogurt)
90 grams sugar

  • it's easier to roll it with a moist kitchen towel or wax paper while it's still hot, then when it's cool, unroll and fill with the jelly and done! =)
