Warmed Spiced Chicken Kabobs

Ingredients Yield: Approx. 4 Servings

• 10 to 12 Wooden Skewers
• 4 Chicken Breasts, boneless and skinless, cut into 1 inch cubes
• 2 Tablespoons Extra Virgin Olive Oil
• 1 Teaspoon Kosher Salt
• 2 Teaspoons Ground Garam Masala (found in the spice section of grocery stores or order online)
• 1 Teaspoon Ground Ginger
• ½ Teaspoon Ground Cumin
• ½ Teaspoon Cayenne Pepper

Directions

Soak the wooden skewers in water for about 20 minutes. (Note: The skewers can be cut or broken in half if they're too long.)

Meanwhile, cut the chicken breast into 1 inch cubes and place in them in a bowl. Pour the olive oil onto the chicken, season with salt and mix well. In another small bowl, combine the garam masala, ginger, cumin and cayenne pepper and mix well. Massage the spice rub into the cubes of chicken using your hands. Next, skew 3 to 4 pieces of chicken on each skewer and place on a plate.

Preheat a grill pan or skillet over medium-high heat. Place the skewers onto the pan and cook for 4 to 5 minutes on each side. Once done, place the chicken kabobs on a plate. Serve with Mango & Ginger Chutney (recipe listed).

Mango & Ginger Chutney

Ingredients

• 2 Tablespoons Butter
• 3 Tablespoons Red Bell Pepper, finely chopped
• 1 Tablespoon Fresh Ginger, finely grated
• 1½ Cups Frozen Chunk Mango, thawed and cut into ¼ inch pieces
• 1/4 Cup Granulated Sugar
• ¼ Cup Water
• ¼ Teaspoon Garam Masala
• ¼ Teaspoon Red Pepper Flakes
• 2 Teaspoons Red Wine Vinegar
• 1/8 Teaspoon Kosher Salt

Directions

In a sauce pan over medium-high heat, melt the butter, add the red bell pepper and ginger and sauté for 2 to 3 minutes. To the sauce pan, add the mango, sugar, water, garam masala, red pepper flakes, vinegar and salt. Stir well. Turn the heat down to medium and cook for 5 minutes. Use a potato masher to slightly smash the mango pieces. Cook for another 4 to 5 minutes occasionally stirring.
