6lb brisket from costco. second time cooking a brisket. using a digi q temp controller. settings for pit, 225 deg, meat temp is set for 180 deg. once hit temperture, wrapped in foil, shut in all vents on the egg and let meat sit for 20 mins inside egg. the birsket took almost 11 hours to reach 180 deg.. drip pan is filled with 1 part water and 1 part apple juice. no mop was used, no charcoal was added during process. I think by adding the drip pan with water/apple juice, it made the meat moist and tender.. didnt do the drip pan on my first try. my first time, meat was dry. this time around, very delicious. my next project will be prime rib or rib eye roast.. 5 lbs of meat was given to my wifey's family in Union City Ca.

  • Hi This is Uwe from germany I am a Egghead and dont stopp ! take your time to smoke grill and for your BBQ you do it perfekt ! It is true the Bud Rub is a very good rub for all i use it specely for beef the rubs von Big Green Egg are also good ! but best is try to make with a dutch ofen rosted Herbs and spices and crush them und make your owen rub ! greetings from germany Uwe from Big Green Egg Shop 24
