@punchingpower When one is learning to cook, they need to start with a solid foundation of basic techniques and methods in order to proficient in the kitchen. When one begins to prepare a dish from scratch....such as a stock/ soup/ gravy etc...again same principals apply....the dish needs a solid foundation to start building from...a mirepoix is just that. It is the beginning step and key ingredient to your perfect tasting dish you are trying to achieve. Basic mirepoix add sweet/savory/umami;-)
You didn't really answered why? why flavor the water with carrots? why celery? why onions? It's almost automatic in most main courses and soups to use this without exception and explanation. And in the final product it is still bland as water. You can't really identify that there were carrots, celery, and onions used.
