This is shoot-STYLE wrestling, not real shootfighting. In the American PPV broadcast it was passed off as real, when in reality it was just pro-wrestling made to look like MMA (Which was a popular thing to do in Japanese pro wrestling at the time).
There were real shootfighting organizations out there, like Pancrase and Shooto. But here, you can clearly see the UWF logos on the turnbuckle.

the one guys leg was hamburger after all those leg kicks...the post fight interview shows his leg is black .
also the softball sized knot on the guys head at the end must be fake .
