I own the Bosch Universal and the Electrolux Assistent, and have for 15 years. I seldom use the Assistent for bread because it's more of a hassle, plus I got my first Bosch in the 70's and still have it! I wouldn't have one of those Red Chinese Kitchen Aid mixers for love nor money. I've never, ever had either of my Bosch machines break after hundreds, maybe thousands, of loaves of whole wheat dough. BTW get the dedicated stainless steel dough hook bowl if you want top capacity.

That machine seems VERY impressive. If it wasn't for KitchenAid's mass product placement, this mixer just might be the best out there. I'm now thinking of giving away my KitchenAid, which labors and heats after making just a couple of batches of bread dough at a time!

Its also called the window test, no oil needed just to stretch it till it is transparent.

It always freaks me out when the dough climbs up the center. That's ok huh? And here I thought I was doing something wrong.
