Maybe bake the potatos @ 325 degrees, then oil fry them @ 375? The initial 325 degree bake would make the potatos nice & hot & they will soak less oil when fried. Plus the oil temp won't drop as much when the potatoes hit it. Just a thought. Has anyone ever done this?

Good safety tips also, and if I could suggest another... After washing the mandoline (it won't have an attachment at this stage) don't ever try to catch it if it falls. I can still feel the scar which happened as I caught it on the joint of my little finger.
These are not pommes frites. And a better pronunciation would be "palm frits" when said more naturally and quickly.

chef there not pommes frites. there pommes allumettes and they should be straight fat finished
