As opposed to rock paper scissors.

at first he shows the person what he's going to do(as you might have noticed, but it's only half the technique), which he subconsciously choose when pressed for time. next he will choose what Derren did last. therefore the first starts with scissor, then stone, then paper same with the next person. this happens as they are pressed for time.

You can see his suggestions before every go nearly. Impressive, however obvious if replay the vid a few times and really take notice of what he does with his hands and the words he uses.

Come to think of the fact that there are actually people gullible enough to believe this shit..he just waits for the other person to do the rock or whateva and then proceeds w teh game

Dudes, I think I know what's going on. Notice that each time, his opponent plays the symbol that Derren just previously beat him with. Upon winning against his opponent's symbol, Derren makes sure to point out and emphasize the sign he just played.
For example, when he wins with stone, he says "my stone blunts your scissor" and acts it out on his opponent's hand making sure his opponent notices subconsciously. As for the FIRST rounds, I don't have a clue yet, but KwokWork could be right.

A Mass of Process Blind People.. He starts to prime with a scissor. So he takes the scissor & derren the stone. & from now on he alays takes what derren took in the laszt round. So he can even lose if he wants.... after that he interrupts & chooses the next one... I don´t know how he primes there but the same process is running there....

@KrumianRalf Notice how he influences what the opponent will choose by mimicking whatever he want's him to play ( he shows the scissors with his right hand in the last one ).... interesting stuff!
