these dogs are Aussies in Germany and we don't dock the tail. I love the long tail Aussie.

Many people often dock their dogs too, just for the looks of it (often in the US since it's legal there). So if you see an aussie with no tail, or whatever, don't assume that it's born without it (which is, by the way, called NBT, natural bob tail). But of course it can still be a NBT :) It's just that a big part of the Australian Shepherds (at least in the US (and other places i'm not hating on USA)) that looks to be a NBT are in fact just docked.

The dogs don't have to be mixed to have full tails. The tail length, or "lack" of tail, depends fully on which dog it is since the Australian Shepherd has a gene that allows them to have different tail lengths. Puppies from the same litter can have different tails, some of them may have no tail and some of them could have full tail. My sister's dog for example has only about 85% tail.

Are your dogs in Australia or somewhere else out of the united states? I've noticed that USA aussies have docked tails and the ones out of the country have full tails.
