I don't know what it is, but on my last trip to the states bars tend to pour huge amounts of head, ~3 finger widths if not more, now I don't know about you, but a well poured beer should only have around 1 finger width, I don't want to spend 1/3 of my beer drinking head.
Also, I don't know about you, but I don't want my beer to have a large metallic rod in it while poured, not only more unsanitary, but can also add a nasty metallic taste to the beer.
