  • I'm sure it's tasty when done this way, but with so much butter in the pan you're essentially frying that fish versus blackening. According to Paul Prudhomme's book, the butter you use to help the seasoning adhear to the fish should be about all you need. It might be a tad healthier with less butter, but hey: if it tastes good - enjoy!

  • I live here in New Orleans and we eat this all the time. You are using waaaaay to much butter. Just put the a table spoon down in the pan and don't flip it over till about 45 seconds on each side so it won't stick. It will be much healthier for you and taste less greasy. Please try it an tell me how u like it that way.

  • you should also make sure the pan you bring the cooked fish on isnt still dirty from the raw fish you brought to the grill.
