Delphine visits with some family and friends to reminisce about "saouce" or "Hogs Head Cheese. She and Kenneth and O'Gwynn ( a combat wounded Vietnam Vet) talk about the old days when Ruthabell would get them to help her make this fine food product.
If you haven't eaten the home-made kind, don't knock it! It's amazing what you can eat when you don't waste the animal, because you can't afford to be wasteful. I find it a little humorous that "soul food" is really "poor folk's" food, color had nothing to do with it!
I didn't quite know what was in HogHead Cheese, until i googled it...
I bought me some at Tritler's, next to Pauls Bakery just of I-59 North Picayune, Miss.
I use to live in Lousiana before Katrina and I've eaten a lot of stuff from Alligator to Nutria Rat -- but just can;t beat the taste of HogHead Cheese -- and Mr Tritler does a darn good job making it........
