Both rainbowfirewave and redbear230 are kind of right. VIA (pronounced "VEE-uh" rather than V.I.A.) is named after the old Italian word for "road" because it can be taken and made anywhere. Someone noticed during the naming process that VIA is the first and last two letters of Don Valencia's last name, and since Mr. Valencia invented the process and had passed away in 2007, VIA was named so.
And thank you for the information. I don't know why exactly I was calling it V-I-A but plenty of people have pointed out that its Via. Subconsciously I was having trouble calling it 'Via' since it's a different word and I couldn't figure out how it'd apply here. Also, the all caps was confusing me.
I work for Starbucks and actually went to a meeting about this today. The company named it "Via" after the man who invented the process. His Last Name was Valencia.
It's called "Starbucks via Readybrew". So basically the name means "Starbucks by means of a readybrew supplement". Like "I'm going to get to work via my car". It's one of Starbucks's subtle names that actually means something like Venti means 20 and it's a 20oz. drink.
