If you prefer to make your own pie crust, this is my mom's recipe for her "Never Fail" pie crust. I don't know where she got it from, but she's been using this for as long as I can remember.
5 cups of flour
1 lbs. of shortening
1 tsp. of baking powder
1 tsp. of salt
3/4 cup of cold water
1 egg
3 tsp. brown sugar
1 tbs. vinegar
Mix it with a pastry mixer. Remember, the less amount you handle the dough the flakier the pie crust comes out after you bake it.
For the filling (taken from The Fannie Farmer Cookbook):
3/4-1 cup of sugar depending on how sweet you want it
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 1/2 tbs flour
6-8 large firm, tart apples (about 10 cups)
2 tbs butter
Makes enough for 2 pies. Fill pie crusts with apples, cover and bake at 425 degrees Fahrenheit for about 15 minutes. Turn heat down to 305 degrees Fahrenheit for another 40-50 minutes. Pie is done when apples are tender.
If you want to freeze pies for later, use the large Ziploc Freezer bags. A 9 inch pie fits comfortably. Do not cook, just freeze.
