Just subscribed! Yeah I don't like to have a lot of junk I don't need in my kitchen. I have one good chef knife and about 3 other knifes. Rock on and five stars!
Great advice on the knives. My fave are my trusty Henckels paring knives - but if you ask Santa for a nice set in a butcher block holder, it will be easy for him to come through for you, as good cutlery usually goes on sale around the holidays.

Yup. I'd say spending about 80-150$ on a knife will cut it :P. I know it sounds pricey, but they last a lifetime. You could also find crazy deals @ industrial restaurant supply stores... XONG
