I have mixed feeling about cheese, I recently found out I've been suffering for years with a terrible overgrowth of candida and the diet says no cheese because it contains natural mold. Is thee something else I could use to replace the parmasian? Thanks! God bless :)

I wasn't adventuresome enough to do raw onion/garlic, so I very lightly sauteed them in the butter (yes butter...and sour cream...life is too short for substitutes!) before adding. I found the dish quite yummy, but no one else liked it much...texture is quite different than potatoes.

I have s few words to all the pinch of this and pinch of that whiners, use what makes YOU feel better about your dish. This is a guideline not a one size fits all dish - use you heads and stop nitpicking every little thing. Otherwise go figure it out for yourself.

Mashed cauliflower is a great healthy alternative to potatoes but margarine or other polyunsaturated fats are not "clean" swaps for butter. Soybean, canola, and corn oils are not "natural" and our bodies are not designed to consume them no matter what the profiteers of these products say on their labels. For everyones health please do not promote these oils over healthy, natural butter.

mvflyhalf - I myself am a work in progress when it comes to learning all of the ins and outs of nutritious eating/cooking, etc.
I completely agree with you and think this is a great point! It took me a bit of time to wrap my head around all of the conflicting info out there on healthy fats and fat "substitutes" BUT now a days, if I want to use butter, I use real butter... no substitutions.
I address this point on my blog, but since this is an older video it reflects some of my past beliefs.
