I don't think Kurasa was really considering ever using Saki against giants up until EVO came around when he saw me using Saki/Tekkaman to counter any giant matchup... But don't quote me on that one. Yatterman actually has an infinite on giants, but he has land charge 4, 6+attack first in order to set it up.

Only once she has several bars and repeatedly uses a super-jumped unblockable. That is the main tactic, but getting those unblockable shots ready while keeping Saki alive long enough is the hard part.
