Fudge Brownie Cupcakes with Sugar Krack Frosting Tutorial


Fudge Brownie Recipe:

Ingredients:
Yield: 16 brownies
Ingredients
* 8 ounce(s) 60% Cacao Bittersweet Chocolate Baking Bar
* 6 tablespoon(s) unsalted butter, cut into pieces
* 3/4 cup(s) granulated white sugar
* 1/8 teaspoon(s) (pinch) of salt
* 2 large eggs
* 1/3 cup(s) all-purpose flour
Directions
Preheat the oven to 350°F. Put cupcake cups in tray.
Melt the chocolate and butter in the top of a double boiler or a heatproof bowl over barely simmering water, stirring occasionally until smooth. Remove from the heat. Using a large spoon, beat the sugar and salt into the chocolate mixture. Then beat in the eggs, one at a time. Add the flour and mix until the batter pulls away from the sides of the bowl. Fill each cupcake cup half way with batter.
Bake for 20-25 minutes, until a tester inserted into the center of each brownie cupcakes comes out clean.
Removing brownies from oven BEFORE the full baking time is best(I took mine out about 4 minutes early)! They should be a few minutes away from cooking all the way thru and then they "set" as they cool. If you cook fully, the brownies will be hard!
Remove from oven and cool for at least 10 minutes. It's normal for them to be sunk some in the middle-Just put a dab of frosting in the middle before frosting like regular to make a more even surface.
Remove the brownie cupcakes from the trays and let them cool for 30 minutes before frosting if you're going to eat them on the same day as making them..
DO NOT put Brownie Cupcakes in the fridge!! The brownies need to stay moist, so put them in an air tight container overnight UN-FROSTED!




Sugar Krack Icing Recipe:
(One batch will decorate 6-8 cupcakes.
Ingredients:
3 cups powdered sugar
1/4 cup room temperature butter
1 teaspoon vanilla extract
2-4 tablespoons of Half and Half

Directions:
Combine all ingredients except Half and Half in large bowl. Beat at medium speed, scraping bowl often, until creamy.
Continue beating, gradually adding enough Half and Half for desired consistency(The more you add, the softer the icing will become-to make this "Sugar Krack" Frosting, you want to add Half and Half until it begins to slide off a spatula easily. If it falls off the spatula without you putting force to it, then it's too soft. If you make it too soft, you can always add more powdered sugar and it will thicken.

You can use Whipping Cream instead of Half and Half to make the icing more like a buttercream.

    Hey! Sorry it took so long to answer!

    I have family in Arizona! I love ur roofs there-and the whole look. Don't use recipes with shortening in a hot climate-there's just a general rule for u-I've seen shortening based icing slide right off a cupcake in the heat. THe ones I use should hold up well, but the best for you will always be an Italian meringue buttercream-Google 'Italian Meringue Buttercream Cake Journal', and that's the best recipe I've found.

    You can-just use vegetable oil or peanut oil-no olive!
