Ingredients: serves 4

3 tsp garam masala
1 tsp chilli powder
2 tsp ground ginger
2 tsp ground coriander
2 tsp lemon juice
2 tsp tomato paste
1/2 cup plain yoghurt
1kg chicken thigh fillets, trimmed, quartered
75g butter, chopped
1 brown onion, halved, thickly sliced
2 garlic cloves, crushed
1 cinnamon stick
3 cardamom pods, bruised
2 tsp smoked paprika
1 cup chicken stock
1 1/2 cups tomato passata / puree
1/2 cup pure cream
Steamed rice to serve

  • in any indian curries no one adds stock to start with and onion and garlic allways serves as a base for ur curry. it is usually pureed.. there are more than one versions of butter available but this not a butter chicken.. it is a chicken curry with added butter..

  • this is fail. you have no idea what you're doing. your "butter chicken" turned out pink thanks to all the tomato puree then, you got some real butter chicken from your local indian restaurant and served that instead which has the original orange/brown color.
