You'll happily devour a delicious pork chop, but can the person who prepared it tell you exactly where and how that pig was raised? Chef April Bloomfield of the Breslin can. And that's an important quality in a day and age increasingly concerned with sustainable resources, natural healthy diets and supporting local farmers like Franca Tantillo, a local grower from whom April buys much of her restaurant's produce. Chef Bloomfield is a true craftsman, taking an interest in every successive step—farm to table—that it takes to get your delicious meal where it belongs. That is, in your belly.

  • Sure, that is a nice farm for your produce, but are are the pigs farmed humanely? Probably not. That is the important thing to consider. But most people would rather remain ignorant about that kind of cruelty.
