Something I've always wondered... if you have the money, time and dedication to build an 80% replica, why not just built a 100% replica to the original factory blueprints?

Yes, same aircraft in both video's and at Emu Gully. The prop diam I am not sure, but can find out as I could be out at Emu Gully again next week.

An obvious question. And it would be reasonable to assume that it would cost 20% more to build 100% than 80% simply because of the material cost alone. Parts are bigger and heavier,, more rivets etc so labour would be about 20% more. But that is not the reason. The main reason is that there are very, very few engine options in the HP range that a 100% replica needs. Ask Mike O'Sullivan, the guy that build the Spitfire replicas, why he won't produce anything bigger than 90% scale.....

Luftwicker, as previously posted, the FW-190 is a scratch built 80% scale replica using a 400 hp M14P radial. Since the video, there is now an 80% scale Bearcat and an 80% scale Mosquito underway.....

I can't quite see what is showing in the background, but most likely to be the M14P-powered 80% scale Focke_Wolf 190. But could be the 75% scale Chev LS6-powered Spitfire.
Regarding the query on the prop, it is a modified king Air alloy prop, virtually the same as what Jim Wickham is using on his nearly completed Chev-powered Stewart S.51
