  • You can get kelp(konbu) at some super markets deal Japnese foods. If you use other seaweeds,they don't work.

  • @Danoftouni Soy sauce has strong flavor itself and can overwhelm dashi's flavor. Using salt is easier to preserve dashi's flavor. In Osaka and western part of Japan, udon and soba soup is almost without soy sauce. In Tokyo and east, soup is darker with soy sauce.

  • Nice vid! I'm a real fan of making fresh dashi, and make it a couple times a week but soy sauce instead of salt adds another extra layer of flavour I think =)
