  • The second ingredient he says is hing powder. This is also called asofoetida and is available in indian grocery stores....it's stinky but it tastes great when cooked.

  • the first one is chana dal as we north indians call it. It is split chick peas ( or does it go by another name ?). Go to any store which has indian spices and buy "Chana Daal". If you dry grind it into powder you would get "Besan" powder, which is used to make batter for "Pakora" Got it?. Yes it is a lentil. You can hear him calling it chana dal properly at around 1:58 time.

  • There are 2 ingredients you mention to use that I can't make out. It sounds like you say chimera? It's the ingredient after the cumin seed and it looks like lentils? The other ingredient I can't make out sounds like pinktoratu, it's the one after you add the curry leaves. Could you tell me what these 2 things are? One last thing, where can I get curry leaves? Do they go by any other names? I live in the US and have limited knowledge on Indian Cusine. Thank you!
