Still, his work remains grounded in classic ingredients and techniques. A veteran of the bar Milk & Honey, one of the first to bring back the classic cocktail, Maloney is now both the managing partner at Jazz Age-inspired The Violet Hour cocktail lounge in Chicago and the mastermind behind the drinks menu at nautical-dive-bar-inspired The Rusty Knot in downtown New York.
