a failed Oscar pull espresso simonelli. Why failed? Because it tastes bitter like a widow's scorn. And the first part of the pour is black espresso; should be more crema at start. Likely culprit is poor grinding/unfresh beans or temperature issues with machine.

  • Actually blonding doesn't add much to bitterness, the very initial part of a pour is what gives espresso its bite as that is high in acid. The last part of a shot is generally pretty weak and really meant to balance the whole thing out. If all you want is sweet catch the pour after the first few seconds and let those just go into the drip tray.

  • I would have said stale beans too. The shot came out at a good rate which suggests the tamp and grind was reasonable but the shot blonded too quickly and it was too pale at the end. The light yellow color at the end is why the shot would have tasted crap. Stop the pull before it goes that color and that way you wont get the extra acidity etc.

  • Honestly...for my own education, why does this look like stale beans...seems to me the crema is considerable....?
