It's the launch control system. It moves the rev limiter to a pre-determined position until you drop the clutch.

He has his foot full on the gas, and your hearing the rev limiter keep the rpms below redline.

I'm going to be buying the new 2008 S240 in about two months time, it's amazing how little info there is about some of the new features.
