I'm curious how this one came out. Seems like it will create very complex flavors. Just a suggestion that it helps greatly to stir mix the yeast very briskly cause aerating the must will help the yeast be more productive. Sounds tasty though.

Well I am still letting it age, but I did sneak a taste and It is Fantastic. pretty dry with a lot of as you say "complex flavors" when it is ready I will video tape the opening and drinking. thanks for your interest.
