You have to add sugar to keep the taste. The yeast changes the sugar in the apple juice to alcohol. So if it runs out of sugar it takes all the taste with it. You can also add frozen apple concentrate to add sugar and even more taste. I fine it better to add sugar at the start and then add concentrate the last few days if you need more taste. But usually the sugar at start keep the taste in.

Well, I added a little sugar to a small glass and mixed the fermented hard apple cider with it and it taste better now. Guess I fermented "ALL" the sweet out of it which took most all of the taste away. I guess I should have stopped the fermentation at some FG, racked it off the yeast and chilled it so some sugers would be left in it ! I am not sure but this sounds okay!

Okay, I made two each one gallon jugs of hard apple cider and it fermented for a week and almost stopped. I tasted it and it doesn't have much taste at all. It does have some achohol thow. Drain a small glass and got a buze from it. It sure would be nice if it had more taste ! Can I add anything to give it more taste? I am a homebrewer and I like beer that has taste.

We found the CHAMPAGNE Yeast caused some pretty explosive results in our Grolsch bottles! They didn't burst, but opening the finished product caused most of it to shoot out of the bottle!
