I may sound stupid but how do you delete/uninstall them?

its the same as deleting a normal app. just hold down until all the apps start to shake and click the little x to remove them.

How did u get the little apple instead of the swirly logo when cydia was loading??

You have to go to cydia and under search type in Fading Apple Loaders. Once you've installed it just go to winterboard and apply the fading apple loaders and you should have it
