Talking, flying horse glitch on Red Dead Redemption

*Spoiler* (if youve not finished the game) I was just completing my 15th stranger mission (Deadalus and Son) when something very strange happened indeed, the man making the flying machine had mirculously transformed into a horse (Mr. Ed) in the cutscene when i spoke to him (achievement makes it obvious but it was on the xbox version. GT: Undead Fiend)
