Chef Kirk Bratrud demonstrates how he prepares his signature braised short ribs. In this video, he has already browned the ribs in a saute pan to seal in flavor, and pics up the process as he prepares to roast them for six hours. Later he demonstrates plating. They smelled delicious, and Kirk's enthusiasm for his cuisine is apparent as you watch him work in the kitchen at The Shack.
