Actually, I didn't want to kill him. He's far my favourite character in the whole game, but I wanted to do Blades questline. Thanks for god, I'm playing on PC, and what are console commands for?

Since you can't actually kill him, if you just keep hitting him with like a 2 handed weapon, that skill will go up.

Kill Paarthurnax: Can continue Blades storyline. Blades offer dragon-hunting quests and a (currently bugged) potion that helps you fight dragons. Greybeards refuse to even speak to you.
Spare Paarthurnax: Greybeards will point out Words. Paarthurnax gives Word bonuses. Greybeards will allow the Dragonborn to resolve the Civil War peacefully. You get an extra ending cutscene for the main story. Delphine and Esbern won't help you anymore, but any followers in the Blades will still help you.
